Summer


This summer I have made a wonderful Balsamic Tomato Salad

heirloom or good quality tomatoes
favorite lettuce
balsamic vinegar
olive oil
blue chese crumbles
salt, pepper

Make balsamic reduction by simmering balsamic vinegar until it begins to thicken.
Layer slices of tomatoes with balsamic reduction, splash of olive oil, salt, pepper, and blue cheese crumbles. Serve over favorite lettuce.
