
This soup was a happy accident. I started out with a homemade stock.
chicken stock;
leftover roasted chicken with picked off
water
onion peels
celery stems
garlic
whole peppercorns
salt
any leftover veggies in a the fridge
boil for several hours, then strain, cool and skim off fat.
For Soup;
chicken
yellow squash
zucchini
purple onion
white onion
red pepper
yellow pepper
carrots
can of tomatoes
pink pepper
black pepper
red pepper
lime pepper or fresh lime juice
hot sauce
dill
chives
garlic
fresh cilantro
salt
After the stock is done, there is not much left to do except assemble ingredients and to let soup come too a gentle boil, then simmer for an hour or so.
When soup is done an extra dash of lime pepper is nice. This soup is really colorful, vibrant and healthy.
